Behind the Scenes at Mexico Ceaty: A Hard Hat Tour with Jason Dady
Before the first margarita gets poured and the tortillería fires up, Jason Straughan, Executive Coach, got an early look at one of San Antonio’s most ambitious hospitality projects in years.
Vistage member Jason Dady opened the doors to Mexico Ceaty, his upcoming immersive Mexican marketplace and restaurant complex set to open on the first level of The Shops at Rivercenter right on the San Antonio Riverwalk. Hard hats on, we walked the space while it was still under construction and got a firsthand look at what Dady and his team are building.
The concept is unlike anything currently on the Riverwalk. Four distinct experiences under one roof: Tres Arcos for Tex-Mex, Dos Cantinas for cocktails and tequila, El Ultimo as a mezcal tasting room, and Dulce Aroma, a panaderia and cafe. Surrounding it all is a main plaza modeled after a Mexican street market, with a tortillería, ceviche bar, churros, a margarita truck, live music, and a mercado stocked with artisan goods.
What made the tour worth the hard hat was hearing Dady talk through the decisions behind the concept, the operational complexity of running multiple dining experiences in a shared space, and what it takes to build something at this scale on one of the most visible corridors in the city.
